Since you are staying in St. George, it would be an easy 20 min. drive to see Snow Canyon. It's a lovely drive and a pleasant park that reminds us very vaguely of Sedona. There are easy turnouts/parking areas for nice walks. On the way out of the park, make a slight detour to see Tuacahn Amphitheater, beautifully situated in the red rocks. It is generally open, so you can walk in and take a look around.
Higher on my list would be a visit to Valley of Fire State Park. It is only 18 miles east of I-15 between St. George and Las Vegas. The firey red formations here are quite a contrast to the subtle grey and sage hues of the surrounding desert. You'll see tall rock formations with so much...texture. This is especially beautiful late in the day when the shadows are long. You can drive through this park or stop for a short walk here and there.
