Pappas is my favorite also. They have dry aged beef whichis the best. The next best is the Palm. And after that Ruth Chris. Capitol Grille and Morton's are ok.

Taste of Texas is great meat, atmosphere is casual. Pappas is great and pricey. If it's great meat of all kinds you like (not just steak) try Fogo de Chao on Westheimer, hands down the best of the Argentinian steak houses and nice atmosphere, too.
