I'm not an expert, but we just got back a week ago from driving up the coast from San Diego to San Francisco. We thought the Hearst Castle fascinating, a study in wretched excess. Plus, about 4 miles north of San Simeon you'll see a sign that says "Elephant Seal Viewing Area". This is definitely worth a stop. This is about 5 miles of coastline (donated by the Hearst family after the seals decided to hang out there to mate, give birth, molt and just hang out. It's an amazing sight. And easy. A boardwalk, a fence to protect the seals, and sometimes a docent to tell you more about the seals than the signs do.
We didn't eat at Big Sur Inn, we had breakfast at Kevah which is right downstairs from Nepanthe (which isn't open for breakfast) with the same amazing views. I wouldn't eat anywhere without a view on that coast.
We also loved the Lobos Lodge if you are staying in Carmel. Huge rooms with a couch and balcony, a continental breakfast served to you on the table in your room, right on Ocean Avenue so you can walk to restaurants. It was a bargain as well.
Have fun, you'll love it.
