Driving from south Florida to San Diego late September...where to stop?

Driving from south Florida to San Diego late September...where to stop?
DH and I are driving with no firm stops, but thinking New Orleans and Carlsbad Caverns are likely suspects. Obviously will need to stop in a few places in Texas, since it is so big...but not sure what would be best. We are also thinking of revisiting Sonoran Desert museum in Tucson. Any suggestions of fun places to stop along this route and how long to stay would be appreciated. While it is mostly a "getting there" trip, we have several days we could use to do it; say 7-10 or more if there are many places of interest. We like walking, museums, art galleries, historic districts, to name a few.
