Our favorite part of the island is the North Shore. There, don't miss Queen's Bath, Tunnels Beach for snorkeling, Lumahili Garden, the Na Pali Cliffs. If you're hikers, the trail along the first couple of miles of the Na Pali Cliffs cannot be beat. Eat at Zelo's Beach House in Hanalei and have an Iniki mai tai. Also have mai tais at the bar at the Hanalei Bay Resort. Wow! What a view. We saw a triple rainbow.
In the west, don't miss the Waimea Canyon or Koke'e. More great hiking, but beautiful views even if you don't hike.
In Po'ipu we took a surfing lesson and loved it. My kids were sure embarrassed when their middle-aged mama got up on the surfboard and they didn't. We took a Na Pali Cliffs boat trip with snorkeling from Hanalei Bay. You may have to leave from the south now, but it is another do not miss.
Makai Orchid Farms, in the east, has a huge, beautiful, selection and will ship orchids home for you. Ours has bloomed like crazy, and gifts of orchids were well received. I believe there is an orchid show on Kaua'i in late August.
We liked Cafe Coco in Kapa'a so much we ate there twice. You have to brown bag alcohol.
Buy the Ultimate Kaua'i Guidebook and read for ideas. It is the best guide to Kaua'i. We spent eight days there last summer, and didn't have tme to do everything we wanted. We'll go back in early August for more.
Have a great trip!

It is well worth taking a helicopter flight (more so than on the other islands). It's the best way of seeing the Na Pali coast.
Waimea Canyon is lovely, and a great contrest to the sodden mountains above.
Hanalei is another nice area - very relaxed.
Ke'e Lagoon, beyond Hanalei, is probably the best snorkelling on the island - on a good day.
For eating out, definitely try A Pacific Cafe - excellent. If you haven't been there before, Roy's is also worth it - we love the chocolate souffle.
A great way of seeing the island is with Kauai Movie Tours (I think that's the name), who take you to all the places the many movies have been shot on Kuai (such as Jurassic Park, Raiders Of The Lost Ark, South Pacific, etc.), some of which you couldn't usually visit otherwise (such as the old Coco Palms Resort where Elvis shot a movie or two and even waited table). The tour is fun too.

Dave, It's Polihale and I always suggest it to first-timers. The most beautiful sunsets and uncrowded beach on the island. Becareful swimming. No lifeguard and some rippers. My rule is I won't go in unless locals are in.
The only prob for some people is getting there! On our first trip, we got spooked when the road ended and the cane field began...We were actually worried about getting the rental car dirty! (Hey! it was our fist trip over...give us a break!)
It's worth the denture shaking ride over the washboard cane road. There are some facilities (water, shower, restroom-suggest you bring your own TP, tho, picnic tables BBQ pit) so you may wish to park near it. Be careful not to park too far off the road, very loose, fine sand.
If it rained that day, be aware that some of the "mudpuddles" can swallow a car and the traction is less than good! Red clay/dirt=slick mud...
It's well worth the trip to the west side to see the sunset..If you don't make it to Polihale, you can see a good one from Barking Sands or Kekaha. The view from the turnout on Kokee Rd is also awesome.
I keep forgetting about water skiing on the Wailua River...A kyack trip up both the Wailua and the Hanalei are prety nice, too. Always be respectful to the surroundings.
A sunset table at the Beach House restaurant in Poipu is also beautiful. Get a reservation.
I just got a few e-mails from some friends over there. They are getting ready for the rains from "Daniel", but it beats a 'cane any day..plus they need the water.
Mahalo,
