Plastic water bottles and powdered drink crystals work well. And you can never have too many snacks, right? We didn't have any problems.
I have to disagree with the idea of getting there before the parks open. Hustling the kids out of bed early and rushing through breakfast doesn't seem to be the best strategy with kids (or adults for that matter). It just causes stress.
Instead, plan to end the day with the fireworks show and work your way backwards: The fireworks start at 10:00 (on some nights they start later). How many hours do you think you'll need in the park? If you arrive at noon, you've got ten full hours until the fireworks begin. If you arrive at 10am, you'll have 12 hours. This is plenty of time to have a ton of fun.
Ending the day with the fireworks has another excellent advantage: they're a formal end to the day. Rather than having to convince the kids it's time to go, the park builds in a solution for you. "Park's closing kids, didn't we have fun?"
Kids never wan t to miss stuff, so staying till the end is a pretty convincing way to wrap it up.

On site has its advantages. Depending on the children's ages staying on site and getting the dining options is often a better way to go. It includes all meals and snacks, but you can only get it when you stay on property. This allows you to do a character meal every day and it won't cost $20 to $50 per person. If you are staying on the experience will vary greatly with the budget. I live in FL and have a 3 year old so we are there often.
