I was there at the end of May last year.
As a matter of fact, I have the maps from the parks here in my office desk drawer (don't ask...)
Magic Kingdom: Mon.-Fri. & Sun.
9 a.m. to 10 p.m.; Sat. 9 a.m. to 12 a.m.
EPCOT: Future World - 9 a.m. to 9 p.m.
World Showcase - 11 a.m. to 9 p.m.
MGM Studios: 9 a.m. to 10:30 p.m.
Animal Kingdom: 8 a.m. to 6 p.m.

Like others, i also recommend wdwig.com highly. Also, if you are staying at a Disney World resort ("on property") depending on day of week you can enter a park an hour earlier than general public. Look on Deb wills site - wdwig.com - for which days are early opening for which parks.
