Eugene kilgore's "Ranch Vacations" is the bible of dude ranches. Has all the details on most ranches in the country.
We stayed at Cherokee Park Ranch in northern colorado about 4 years ago. It is about 100 years old. Lovely cabins, great food, warm days, pleasant nights. They have a stocked pond, a fly fishing stream, shooting (where you shoot clay pigeons), a hay ride, excursions to Estes park, white water rafting and wyoming. You can ride all day every day, or go on shorter trips. Even had a two day pack trip. Lounge with pool tables, playground equiptment and a petting corral. One night had line dancing, another had a "mountain man" come in to talk story.
Beautiful country...hills, greenery, streams, and open fields so you can do some cattle rustling and horseracing.
It is about an hour north of Fort Collins. You can drive up from Denver easily.
We also stayed at The Flying U up in British Columbia. Being in Canada it is very cheap. We loved it there, but it is more rustic than Cherokee Park. Food is more hearty than gourmet, there's a pub on site, and great little cabins with a porch & rocker and pot belly stove. Bath house though, and none of the other activities..just canoeing on the lake, horseriding through beautiful hills without a wrangler (they give you your horse, a lunch and a map each day. Don't worry, the horses will find their way home if you dont). We drove from Vancouver- about 4 hours east. You can take a train right to the back door of the ranch though.
