Jelly Bellies (in North Chicago, about 1 hour north of the city) has tours; also the Tribune used to have tours of its printing plant. You might try the Chicago Convention and Vistors Bureau for more ideas.
I can't think of a car factory in Chicago - looks like you'll have to go to the Detroit area for that one.
