Some people will debate particular favorites, but I believe all the major hotels (Wynn,Bellagio, etc) are good. While not a big buffet person, I do like/love the breakfast buffet at Paris.

For more budget friendly buffets I'd choose the Palms, Orleans, all the Station Casinos, the Golden Nugget and Main Street Station downtown.

Try the buffet at the Rio. It's one of the best. :

IMHO The Brunch Sunday Morning at Bally's. The food was fantastic. Many meat choices, wild game, fresh baked turkey with all the trimmings, thick prime. The salad selection was huge and caviar. I made my DH and DF go up and give Me their share of caviar. I'm sure I could have gotten as much as I wanted but I was shy back then. And the Dessert table was to die for. I wish I would have had a camera the Dessert table was to die for.

The Service was the best. They were outstanding. We had at least 4 people taking care of our table. All new silverware when you got back from the buffet. Mimosa with a fresh strawberry on top. Just a beautiful little drink. The coffee was served with real cream, I loved that fat floating on top.
As for the price, I didn't notice. It was a comp my friend got and what a friend to turn us on to this Brunch. And the crowd in the restaurant were a great mix. Young, Older, Punkers, Ladies in Hats. Just super cool.
