K it's not Brooklyn that's getting a bum rap but Red Hook and the pier at 7am on a Monday morning. I did start out suggesting some Brooklyn stops as things to see/do but the issue is are they open on a Monday (the botanic gardens aren't) and the original question, WHERE to meet. I know about the ferry to/from Ikea into Manhattan but it doesn't run until the afternoon and according to google maps it's a 15 min. walk through what I think is not a very nice area. If they venture to Manhattan, yes, perhaps they can use it to get back to the ship in the afternoon. Do you think the walk between the ferry and the ship is ok??
It would be GREAT if you or anyone else could provide some suggestions on exactly where these people can meet and how to get there from the cruise terminal. I was suggesting a place for breakfast as a logical first stop and so the OP would have a place to sit comfortably in case the parents are delayed getting off the ship and also in an area with some things to do/see. Somewhere in lower Manhattan seemed to make sense since there's plenty to do/see for 6 hrs. I would spend the time in either Brooklyn Height or Dumbo.
What are doing with their luggage?
There are specatcular views of Manhattan from the Promenade, a variety of different restaurants, historic and beautiful homes, ecelctic and ethnic stores, and art galleries.
Even getting from the pier to the ferry requires a cab and that point you might as well go through the tunnel which is right there. The ferries to Manhttan during the week are very limited any way.
