We can't currently do big city/lots of walking trips, either, and we're planning on Nova Scotia/PEI in October. We can do small hikes and get a little bit of city in Halifax, but just relax and see the scenery.
Hope your hip heals quicker than expected.

Facts of me: I am not at all athletic. I have lupus, a genetic heart condition (hypertrophic cardiomyopathy) that really only became troublesome in my 60s, and osteoporosis from years of steady steroids. I've had many broken bones and I'm 67.
I've always thought of myself as brave and persevering, always ready to get well quickly. But this has thrown me off my square.
My femur split apart like a chicken wing, four extra fractures at the top and all of it pushed up into the hip and pelvic area. There is now a long rod down my femur, a large pin holding in the chicken wing split, and two more spots with pins at mid thigh and above the knee.
In my book, this is a devastating injury. I get a tiny bit better every day, but the improvements are, by my standards, minute and coming slowly.
I didn't want to use my air voucher on a trip I might not take, which is why I was thinking of changing destinations. I haven't reserved anything. I was just about to do so when I fell.

From what you write, there probably will not be a better time to visit the Southwest. Keep in mind that wheelchair access exists at overviews and on walkways on the rim of the canyons. That should make walking feasible for you. Google the various national parks for more information.

I am so sorry you are going through this. It sounds very painful. Healing thoughts going your way and I hope you bounce back sooner than you expect. As Michael points out, Zion and Bryce can be seen without any major hiking. We didn't do any hiking and still enjoyed these parks.

I am starting to think that this could be a trip that we could do. It is a bit daunting to plan this but maybe for early November it is the kind of trip that I can plan in a month or two from now.
I'm also thinking about other driving trips, some mentioned above.
Cape Cod is on my list, since another poster has been asking questions. Maybe early October.

I would do either of your trips, Southwest in November will be cool in places, perhaps snow on the trails in Bryce, but probably fine on the roads and at the pullouts for views.
This map with distances and times was posted by another Fodorite and I've found it helpful:

As to Cape Cod in early October, it's one of my favorite times to visit. Except for Columbus day weekend, the tourists have dwindled, you can park in most of the places that are restricted in the summer and many of the nice places to eat are still open. The National Seashore VC should be open as long as the government doesn't shut down.
It will probably not be swimming on the beach weather, but if you heal at all it could be nice walking on the beach weather. It also can be spectacular watching sunrise on the ocean side and/or watching sunset on the bay side. I'd look for lodging between Eastham and Provincetown.
