Try www.cucinare.com. This is the site for North End Market tours, run by a woman named Michele Topor. I've heard wonderful things about it, and I'm taking one of her tours in May. It's a nice site, and Michele herself is very nice. Try to reserve as soon as possible, as they are booking up quick, esp. Saturday slots.

You might want to check out the local Adult Education Centers (www.bcae.org or ccae.org). They frequently offer one-day tours of various restaurants and if there's nothing scheduled, maybe they know if their instructors offer tours separately(?). For example, here's a tour set for August:
