SouthWest region of the USA please! More specifically Arizona and New Mexico, and primarily interested in Southwest cuisine, Mexican, Tex-Mex, New Mexican etc.

There is a small town in New Mexico called Hatch. This is where many many of the states green chiles are grown. I believe it is nearly Las Cruces. My husband and I went to Hatch and had green chile enchiladas at a store that had previously been a gas station. They were delicous.

I grew up in Carlsbad. Even as kids we went to the Cortez to eat Mexican, and we ate the enchiladas as enthusiastically as the adults. Even now I go there when I visit family but I have to admit, it's not as good as it used to be (new ownership).

I think the Shed in Santa Fe is a fun experience. Have their blue tortilla flat enchilada for a very southwestern experience.
