Caesars Palace, Las Vegas?
If so, the best restaurant in Vegas just opened there, Restaurant Guy Savoy. If you get reservations, be sure to say hello to Franck Savoy, Guy's son who moved from Paris to run the 75 seat restaurant.
(And what exactly is "Celine"? A new show? Surely not that washed-up Canadian "singer"? ha ha)

While you said cost was no object, it's worth noting the tasting menu runs nearly $300 per person. Add drinks, tax, and tip, and you're in the $400 - 500 per person range.
Another consideration is time. A meal there could take long enough you'll need to rush things a little to make your 8:30 show.
