I wouldn't say it is the BEST (haven't been to all of them), but everyone in our group liked Japonais at the Mirage.
We also liked Lotus of Siam a lot, but it is not on The Strip. Also, it is very casual--much more so than the restuarants we went to on The Strip.

We loved Lotus of Siam. They're also known for their $9 lunch buffet. I am not a buffet person and originally planned to just order off of the menu since they specialize in Northern Thai cuisine. After looking at the buffet, I decided on it for the variety... and it was wonderful and fresh. The spicy beef noodle soup, chicken curry and stir fried noodle dishes were very good. We also ordered a couple items off of the menu that were excellent. The buffet has some fried items that didn't seem very authentic, so I passed on them. Don't be turned off by the rundown strip mall and try to get there when they open at 11:30am if you plan to try the buffet.

Just thought I would put in a good word for Sensi at the Bellagio. The menu is eclectic--Indian, Asian, pasta dishes, etc. The service was excellent and I really enjoyed our meal.
We didn't try Lotus of Siam this time...there are just so many restaurants to choose from. Maybe next time! Thanks for all of your suggestions.

Try Hannah's Neighborhood Bistro (http://www.hannahslv.com/). It's a vietnamese/french fusion restaurant that's not on the strip, but not that far and their garlic noodles and dungeness crab are to die for!

Unfortunately Hannah's went under and it's not looking good for the restaurant that took the space.
The Japanese restaurant inside the Wtnn is very good as well as the new Japanese restaurant inside the Palazzo.
There's also a new Japanese/sushi restaurant coming to the Bellagio...stay tuned.
