"...checked out the flights from DC to Jax and they look ok at the moment - is there an airline that is best to use when travelling this route."
Consider JetBlue http://www.jetblue.com
They have good prices and excellent customer satisfaction ratings.
"also - what about the weather - is the area prone to getting rain (we have enough of that here in ireland) just checked the weather there and it is due to rain for the next 5 days - is this normal ?"
There can be some rain in the spring, but summer is better known for being the rainy season. However, it is a warm rain, not a a cold one. Yes, it's true that the next few days have a chance of rain ranging from 40%-60% probability. However, it will not rain all day.

Here's another idea, Hollywood Beach, Florida. It is very near the Fort Lauderdale airport. I just visited there for the first time and enjoyed it. If budget permits, maybe stay at the Westin Diplomat on Ocean Ave (beach front). Definitely go to the boardwalk, really fun place.

We visited Ireland one May and the headline in the paper was "Sizzling Seventies". We just thought it was normal, good weather
Honestly, if pool time is a big part of your imagined trip experience I'd fly to a location further south in Florida. The weather CAN be nice at that time of the year in Carolina, Georgia and northern Florida beaches - but for warm weather and water, go further south. We've played in the water on Cumberland Island (GA)on Dec. 31st before - temps in the low 80s - but you can't count on that. I'd fly to much further south if beach/pool time is important to you at that time of year.
Is this a 2012 trip you are planning?
By the way, it snowed on us at Loch Lomond on that same trip
(Ireland, England and Scotland 3 week trip)

No this trip is at the end of next month ..... I know very late to be planning but we have plans for 1st leg to new york and dc and we are pretty flexible on the 2nd leg just some relaxtion, beach, sunshine and nice food so was trying to determine best bet on east coast... looks like florida is winning but i was more keen on SA or Georgia as I always imagined Florida to be so so busy....

If SanParis2 is going to recommend Amelia Island, then I must also mention St. Augustine as well. St. Augustine is off the radar of most tourists to Florida, but well worth visiting for several days. It is America's oldest city and has tons of history and charm. Also good and reasonable restaurants, art galleries, shopping (2 outlet malls) plus sportfishing, golf, etc. Here are a few links to get you thinking about it:

A good place to stay would be Beacher's Lodge http://www.beacherslodge.com/, about 20 minutes south of the historic district. They are direct oceanfront, have a nice pool and there is a wonderful, quiet beach. I suggest an upper floor (3 or 4) king unit for best views. If you want a bigger resort, consider the Ponte Vedra Beach area, between St. Augustine and Jacksonville. The Ponte Vedra Inn and Club is an AAA 5-diamond rated resort, but there are other nice places too.
