Alaska Aug-Sept Help for a Scot

Hi, I'm Alaska bound and would appreciate comments and suggestions on my plan so far. We're a couple travelling in a rental car. We ;ole activities, small to medium hiking (that would be all i could convince my boyfriend to do! OK he only wants small), stunning vistas, animal sights, cheap and cheerie eats.....
Accommodation, car, ferry pretty much booked - now to fill in the blanks....

A few questions i have
31 Aug - Anchorage - I have found a random group of ideas so put them all down for now. Is the sled dog rodeo worth it, or is the Denali free demo as good?
What would you do in one day?
1 Sept - Flight See from Talkeetna - 1 day after Northern lights coupon expires ( Emailed in case they would honour it. Can i ask what happens if it's a no fly day for scenic flights. Do you get a refund? Found an amazing looking full day ATV (quad bike) tour from Palmer. Maybe an alternative? it's Alaska Backcountry adventure tours
3-Sept - Is the Mt Healy overlook trail a good walk?
5- Sept - Looks busy but half are scenic stops - it's another random group of ideas day at the moment. Is it fun to pan for Gold?, any recommended short hikes?
6-Sept - Scenic stops or short walks?
7-Sept - (Bear viewing as a back up if we haven't seen any) - chilling day - Is a cycle on the spit a good option?
8th Sept - More doggy options - Good husky visit here or you have the crazy hele-snow sled which costs a bomb but must be pretty unique? (i doubt you can but if you can compare to denali scenic flight what would you do. Actually i can't afford it but i still want to know ;O)
10th Sept - Any good options for afternoon/early evening in Valdez?
12th Sept - THE stops on the way?

AND what have i missed that i'll kick myself for??!!

I've never been there but I saw once on Bizarre Foods that they make a Jellied moose nose, may be something you want to try.

Well Meams i can't say it was high on my list...but that's maybe because i hadn't heard of it ;O)

natty79, put some extra money aside for even "cheap and cheery eats" when you are up in the Denali area. I understand it's the cost of transportation to get food to this fairly remote area, but I was shocked at how expensive things were.
