My husband/I spent New Year's Eve a few years ago and loved every minute of it. We stayed at the Exalabur cause it had good special rates going on. Previously we stayed at Treasure Island which is centered better.
We aren't into gambling much either but had a ball both times we went. We did a lot of walking and spent time in each casino/resort just to see everything. New Year's Eve we booked a Neil Diamond concert at the MGM...GREAT! Check the net to find out what's happening.
Heard the Bellagio is nice too as said in posting above...didn't say but walked around it and saw the fountain show in the front.
I know you'll have fun wherever you stay.
