empanadas recipe....

Some people have asked about the empanads recipe... As you know the best empanads arein SALTA, that is what most people know, and I wan to chare with all of you.

Paste:

1 Kg of flour - fat (about 150 grams)- salted water ( as salted as you want the paste)

Filling:

Chopp 3 medium onion, one big pepper and fry in a sauce pan, add salt, Kummin, red pepper ( paprika) and about 1 kilo of chopped beef. and let it cook very well. Separated cook, 3 or 4 potatoes chopped into samll cubes in water+salt+vinegar ( this is the secret to keep the cubes shaped; do not tell it anybody, please). Cook four to 6 eggs in boiling salted water. Add the potatoes ( without the water) and the smashed boiled eggs, and chopp green onion to the 1st preparation...

Cool it down and fill the discs with the filling, make the "repulgue" and cook in the stove or fry.

For chicken empanadas you use cooked and chopped chicken instead of beef and to make cheese empanadas...

That is easier, get a cheese which should be not too hard not too soft.

Onion - pepper chopped and fried, add salt, paprika put it away from fire, and chopp the cheese into cubes. Mix it all and fill the discs, fry the empanadas, for a shor time in the heat. Any doubt, just keep in contact. And please tell me how it resulted...

LLajwa is the tomato sauce to accompany empanads,

Just smashes tomatoes, salt, (neutral oil), and some chile...

Some empanadas express can be made with a slice of ham and cheese, make a ball like the ones you make with a piece o dpapaer to through it away, you can also put a piece of Olive inside and putit on an empanadas disc! Bake them and enjoy with a great wine from www.undiscoveredwines ! You will feel in Salta...
