Use your exact dates if you have them. Saturday nights are usually more expensive than other nights.
I'm not clear about what you mean with "large surrounding area". Sydney is a city of about 5m people and city hotels don't typically have a large amount of undeveloped space around them. However, if you stayed somewhere like the Intercontinental, or Quay Grand, the Royal Botanic Gardens is just footsteps away.
The map will show you where everything is in the CBD - and Booking.com also has location maps. As you will see, Sydney has a lot of urban green space - Hyde Park abuts Elizabeth Street, Barangaroo is close to Millers Point/The Rocks.

For your budget of 2-3k for 12 days, consider Four Seasons Sydney for great breakfast friendly staff, and a nice pool with harbor views. Shangri La Sydney is another good option with spacious rooms, excellent service and an indoor pool. If you want something central The Fullerton Hotel Sydney offers a great location and good breakfast options. These hotels are close to major attractions making it easy to explore the city.
