Germany Romantic Road: Dinkelsbuhl, Nordlingen, Ulm

Germany Romantic Road: Dinkelsbuhl, Nordlingen, Ulm
Dear Fodor's Friends,
I'm going to be driving the Romantic Road in Germany for a few days and wanted some input on one of my choices. My question concerns a day when I'm going to be driving from Rothenberg to Fussen (I am staying overnight in both towns with a free day in between). I an planning to stop in Dinkelsbuhl. I was initially going to also stop in Nordlingen. But now I'm wondering if Dinkelsbuhl and Nordlingen will be very similar and a little repetitive, and so I should replace Nordlingen (or Dinkelsbuhl) with somewhere a little different. Ulm is the main candidate, for the cathedral and the town hall and the Fischersviertel. Or Augsburg for the town hall and Fuggerei (though I think the town hall there is currently under renovation so probably not). Any thoughts?
Note that I'm already going to a bunch of other places (Wurtzburg, Nuremberg, the Wieskirche, the church at Rottenbuch, etc.). My question is just about this specific part of my journey and Nordlingen in particular. I love medieval architecture and am looking for a town where I can stroll around for a couple of hours, see a distinctive building or two, and maybe eat a nice piece of cake and coffee.

I haven't been to Nordlingen but stayed 3 nights in Dinkelsbühl, "Schönste Altstadt Deutschlands", from where we visited Rothenburg ob der Tauber, the Markgräfliche Residenz in Ansbach and the Residenz & Schlosspark in Ellingen. Dinkelsbühl is small but lovely and quiet (May 2023) and a nice change from the cities we visited before. .
