A little hike down from Fløyen maybe? The route via Sandviken is the nices, imo. Or hike from the top of Fløyen to the Brushytte kiosk? It's a popular and well known spot where people go for a coffee and cake on sundays. It's a good turn around point for a Fløyen hike.
I was also impressed by the set of KODE museums. Really interesting collections (for me the Rasmus Meyers collection stood out)
Ulriken can be nice too, for winter hiking. You can go up in a cable car, there's a nice restaurant on top and there's a good deal of hiking to be had. Also, you'll be doing the friluftsliv thing with many "fellow" Norwegians.
Utne would be nice for a day trip by boat, the Hardanger Folk Museum is open all year, and Utne itself is a beautiful place.
A real Bergen institution is Hollbergstuen, where you'll see many Bergen regulars, often groups of friends who habitually have lunch or dinner there. The food is traditional and good. It can be reached from the street, or, more conveniently in winter, from Galeriet shopping mall.
