That's a pretty big area you are planning to cover! As you can imagine, different areas gave different weather patterns, so there is no time of the year when the weather will be ideal in all of the places you are considering.
Look at www.weatherbase.com for weather information on each area you are considering.

Dec to April is good for most of SE Asia although Vietnam, being a long thin mountainous country has more complex weather patterns. This website is pretty useful for planning as far as weather is concerned. https://www.selectiveasia.com/vietnam-holidays/weather You can also click on the destination drop down for other countries.
New Zealand’s climate is the opposite to the northern hemisphere so if you did Asia first you would arrive in winter - May - sept etc. which is when we usually visit. Very cold but a lot quieter and cheaper. Australian climate varies tremendously being a huge country.
The weather isn’t necessarily the be all and end all and I wouldn’t let it dictate everything for you. Covering such a large area, you are bound to get a mixture of weather.

In fact, each country has best time for traveling, so it is difficult to find the best place for traveling to all places in Southeast Asia. However, if you want to visit all destinations, you should spend at least 1-2 months for traveling

The later into the year you go to New Zealand and Oz, the warmer weather you get (oct, nov, dec). Thailand and Cambodia are very warm all year round. As @crellston mentioned above, Vietnam is a bit more complex for weather, but most of the country is pretty warm all year.
Overall, the weather is southeast Asia is sporadic and unpredictable. I was in Thailand a few weeks ago and the weather report said it would rain/storm every day, yet it was sunny and beautiful each day with very little rain. Tough to trust and plan around the weather forecast.
