By quick I mean an hour or two, at the most. We're going to spend 2 1/2 weeks in Asturias and will be driving there in one day from Madrid! We'll be traveling with a baby, so we'll have to make pretty frequent stops and were wondering what would be on the road in between (took a train the last time)...

From Madrid to Oviedo you will take A-6 highway to Benavente in the Zamora province. From Benavente you must take another road to León where starts another highway, a toll one, which will take you through the mountains to Asturias.
This means that the only incredible city in your way to spend two-three hours may be León. The others posted by Graziella needs a little 'redirection', spending another hour in the road (no too much time, but not for making in two hours the 'redirections + visit').
Also in León, there are so many things to see that two hours is not enough.

Sure you´ll enjoy

Hi , Jose is right!, and Leon couldn t be a more wonderful choice, there is good downtown underground parking, but be absolutly sure not to leave anything in sight!, park and then head to the Gothic Cathedral( Its glass work is fantastic, should it be a sunny day you will never forget it!) ., also go to the Colegiata de San Isidoro, a short walk from the Cathedral, and pay a small fee for a tour of the 12 th century frescos illustrating a variety of biblical and mythical subjects as well as scenes of medieval life. They have been called the Capilla Sistina of Spain.
Right there in the Barrio Humedo you can have lunch great tapas in lot of places, but if you wish an unforgetable meal and still have time look for the Posada Regia, 's restaurant called I believe the Meson Regio. The food is excellent.
Also the Parador Nacional San Marcos is in a beautiful Renaissance building in the Camino de Santiago worth visiting, but if you are short of time stick to the Cathedral and San Isidoro and walking in the old town. Buen Viaje.

I have made the trip between Madrid & Oviedo many times & second the recommendations that Leon would be the best en-route city to stop in for a few hours.
As mentioned most of the highways you will travel are "freeways" and tollroads. From Leon to Oviedo via the toll-road thru the mountain tunnels, the trip takes a little more than an hour!
