I think it could be worth it to end w/ Tulum.
Otherwise, to break up the trip back w/o a detour, stop in Valladolid/Ek Balaam as lots of people recommend, and take day trips to Tulum and/or Isla Mujeres, from that all-inclusive you're not so crazy about.
