Puerto Vallarta has all kinds of hotels, from little posadas to good sized beachfront hotels in town to megaresorts outside of town. It just depends on how much money you want to spend and how you want to spend your time. I personally like a big mix of beach, exploring, shopping, restaurants, and nightlife, so I like staying in town. The town has a wonderful vibe. Other folks like to relax at a big resort and maybe take a taxi into town one day. To each his own.
Yes - make reservations as soon as possible. Today would be good.

Yes I've been at Christmas. To me town didn't feel much more crowded than other times in the high (winter) season, but you DO need hotel reservations asap.
As above, I can't suggest without more details. What price range? Do you want an upscale resort hotel? Or a normal Mexican 3-star? Does it need to be directly on the beach? Pool? Restaurant? Do you want all 5 people in one unit, or will rent two rooms? Do you want a kitchen or frig? Do you want to be near downtown Puerto Vallarta, or in the larger, newer resorts out in Nuevo (~1 hour to the north).
I've spent a lot of time in PV and love to make hotel suggestions, but hard to say with no information.
Oh, and the weather will be gorgeous!! Low 80's in the day, most likely. Sunny and clear that time of year.

Hola: I think you and your spouse may like the laid back quiet and beach beauty of Nuevo Vallarta. HOWEVER, for college kids, I think they definitely would like the Old Town activity, free entertainment on the Malecon within easy walking distance, abundant night life, young people in attractive attire for beach,
fabulous restaurants to walk to, flea markets for day trips, plus all the tours, etc. Old town is the happening place for all to enjoy. That is a great week to be in PV--warm and sunny. If you are interested in the 5 star category, there aren't any in Old Town. But who spends much time in a hotel room anyway? I would contact as many travel agencies on line and try for a week at a Condo on the Beach in Old town--WOW, super fun trip. Yes, it is a bit more expensive that week.

We have rented villas in PV Xmas week with h.s./college kids several times. City is too crowded for my taste then, but kids like it. (That said, some rarely left the villa.) Air and water temp are perfect. Air - 70F low, 80 high, Water - mid to upper 70'sF. If you can get a villa or condo in the lower Conchas Chinas area, that's the best location for authenticity and beach life. Picturesque beaches, yet easy walk to town.
