I think Toucan Rescue Ranch is a great first day in CR. We always do overnight flight then go straight there to unwind before driving. We stay over night. It's pretty magical. The reason I don't do it the night before leaving the country is that you don't want to miss breakfast there-- not only is the food good, but you have breakfast with the baby sloths! They usually feed them at the table while you eat. Great for kids.
In Manual Antonio one of my kids' favorite activities was horseback riding with Brisas del Nara. They pick you up, drive you to the ranch, make you breakfast, take you horseback riding to a waterfall where you swim, then back to the ranch for lunch.
