My understanding is that Sprint phones generally don't work ANYWHERE in Mexico. My brother has Sprint and says that when he travels into Mexico, Sprint gives him an access number that goes through a Mexican company (contact Sprint to see what they say).
I have AT&T Wireless and my GSM phone works almost everywhere in Mexico...no advance procedures necessary. Just pick it up and use it, same as in the U.S. You have to pay international roaming fees, plus per-minute fees, but it's super convenient. Unfortunately, now that the AT&T is merging with Cingular, I'm fearful that the service will degrade to Cingular's level...
Another suggestion: just buy a ladatel card and use it with pay phones in Mexico. A 50 peso card usually gives me about 3-4 minutes of talking. Not super cheap, but it beats getting reamed by hotel phone fees!
Have fun!
