You mention, Amsterdam- Hook of Holland to Harwich to London , is this via Euroline as well ? Can you please advise. That would be interesting too
Perhaps we can tour AJAX stadium as well

you might want to check out this site if you are interested in visiting Ajax. http://www.amsterdamarena.nl/world_of_ajax/en/
Also if you happen to catch one of the snowy periods, make sure you have a back-up plan that involves staying longer in one place. Travel by train or road might be much slower or not running at all.

Amseterdam - boat train to Hook of Holland, high-speed ferry to Harwich International train station, boat train to London Liverpool station - no bus involved - special trains to and from docks - all-inclusive ticket with some neat discounts online in advance - I'll check for website later.

You want to experience snow, which is more likely later in the winter. But take into account that travel in winter, even without snow, is slower and less reliable. Especially on buses and boats as opposed to trains.

Well trains can also be affected by snow - in Germany a few years back in January many trains were disrupted by snow on the tracks - rather unusual the amount of snow they had but IME many many trains were either cancelled or running late - ditto in Holland when I was there that year as well.
And even cold weather can effect trains in climates not used to sub-zero temps - so just keep in tune with the weather. usually it ain't ever really cold and there is relatively rare snow in Holland and much of lower Germany.
