Definitely a canal boat ride, the Anne Frank house, and at least one art museum (there's one for Rembrandt, one for Van Gogh, and one that's variety; I think that's the Rijksmuseum.) The area around the Royal Palace is lovely. Lots of shopping, great dining. Be sure to try a pancake restaurant, and some authentic Indonesian fare!

It's covered above and just about right for two days. But, to elaborate on "Indonesion fare", make sure you go to a rice-table (Rijsttafel). This is an Indonesion fare (something like Spanish tappas) where you get a variety of small plates of meats, fishes, vegetables and sauces (mild to spicy) served with rice. If you can handle it, order the spicy along with good Dutch Beer. A good one in Amsterdam is Restaurant Selecta; good food, great ambience (art and music) and even people watching through the picture windows.
