Hi kadds02,
You can get the exact train schedules at the Swiss rail site
www.rail.ch
Your destinations will be
Gruyeres (For the cheese making, which is right next to the train station. The castle and the sweet village are up a hill, about a 10-minute walk).
Broc Fabrique (for the chocolate facotry)
More information about the factory is at
www.cailler.ch
If you want to take the specific and touristed Chocolate Train from Montreux, it only has one departure a day, I think around 09.00 or 09.30.
Different people take different amounts of time while there. I've been to Gruyeres three times and still haven't been inside the castle -- I generally stroll the village, poke around behind the buildings and in the cemetery, and then have something to eat (the fondue and the double cream are fabulous). There is also a famous Giger museum there to see more works from the man who did the creatures for the "Aliens" films. So, you could spend a few hours or the full day doing this.
Have fun as you plan this!

Hi we undertook this journey from Geneva, we left around 9 in the morning and were back by 4.30. What you need to plan well is that the train from Gruyere back to bulle to go to Broc. We missed the train and then had to wait for about an hour to get the next train.

I spent 2 weeks in Switzerland at the end of June. While we were in Montreux we took the train to Gruyeres. A movie was being filmed and the charm of the mid-evil town was lost. Log ramps took up most of the room on the street. Staging was set up for lights. Unfortunately it lost its charm. Check before you go. I did not to to Broc so I can not comment.
