Unless you've got very specific dietary needs, I absolutely wouldn't rely on vegetarian websites.
Every Italian restaurant (apart from fish or meat specialists) serves a wide range of meat and fish-free food. The very best vegetarian food is sold in the very best restaurants: few vegetarian restaurants qualify. The kind of places on the Happy Cow site ("vegan burritos"; "menu includes tofu") are the politically correct junk food specialists that have given vegetable-eating a bad name. I go to Italy to eat the real food the country's famous for - and that's usually even better if it doesn't include meat or fish.
Wherever I am in Italy, if I'm on a meat-free regime, I get my copy of Michelin, go to the best rated places and just order the meat-free dishes.
None of this applies if you're vegan, though. For that, I'm afraid the tofu burrito merchants may well be your best bet.
