Valencia or Seville?

Looking for opinions/experiences that any of you have had in Valencia and/or Seville. I can realistically only visit one or the other on my 10-day trip to Spain.

Our proposed itinerary:
US --> Madrid. Staying 1 night upon arrival awaiting daughter's arrival, so we can leave Madrid late morning.

Madrid -->Barcelona by train . (Stay 2-3 days)
Barcelona -->Valencia or Seville (Stay 2 days)
V. or S. -->Madrid (Stay 2 days)

To give you an idea of what I'd like to experience while in Spain, if it helps with recommendations:

* Seeing/experiencing unique things about their culture and architecture
* Experiencing their cuisine
* a little bit of shopping

What might I experience in Seville that is different from the Barcelona/Valencia part of Spain?

THANK YOU for any advice you can give me. Also, if there are any recommended books I should purchase to help with my research, I'd love your recommendations on that.

What time of year? Seville does get pretty warm in the summer.
