If you are picking up a car at Malpensa it is not a great plan to stop in Torino on your way to rural Piemonte. Torino is a busy city, with lots of one-way strets and some areas totally off limits to non-resident drivers. Driving jet lagged, it makes for a lot of stress.
I will also point out that the driving distance between the Langhe and the val d'Orcia is really very long, but it looks like you have already booked.
Also, if you make a stop in Perugia on your way to Norcia, you won't have time to see anything else, and pretty much the same is true of the other stops you mention other than possibily Torgiano. These places are complex and interesting, and many sites and shops have long lunch time closures, so you should probably focus on seeing one.
If you are going in late May/early June you may be too early to see flowers in the Piano Grande (Castellucian plain). I don't know if there is a way you can check before going. It is still a beautiful sight without the flowers.
You might do better to drop off your car in Orvieto (Umbria) and take the train back to Rome.
Use booking.com to find a Rome hotel available for the night you want at a price that you like. If food is very important to you then you might first pick a restaurant and then a hotel within walking distance.
