Two days in Brighton, UK - Thoughts?
I am sailing from Southampton to NYC and am arriving a few days prior to embarkation on Sunday, Nov 19. Having been to London many times, I decided to save some money and re-visit Brighton for a couple of days. I was there 20+ years ago and still remember the Pavilion. I've come up with a plan but always like to get input from Fodorites in case I'm making a drastic mistake or missed a gem.
Arrive in Gatwick on Friday, Nov 17th around 8:00 am and will take Gatwick Express to Brighton. Then, on Sunday, Nov 19th, I'll take a noon-ish train to Southampton and taxi to the cruise terminal. So I've basically got 2 full days for Brighton and this is what I was thinking: Pavilion, Brighton Museum & Art Gallery, Hove Museum of Creativity, Brighton Palace Pier and starling murmurations over the west piers at dusk. If weather is dry, I'll wander the promenade and pebble-beach. I like history, art, architecture and off-beat spots; if I run out of things to do, I can always wander the Lanes or M&S. I appreciate any suggestions or comments!
In terms of lodging, I was thinking about the Staybridge Suite Hotel near the train station; I like having a mini-kitchenette and it's walkable from the train which is handy. On the other hand, I don't know if that's a very noisy area? (Wasn't Brighton the new hot spot for hen and stag parties? Although maybe late November is too cold for them...)

The fish and chips at Captain's were great when I was there in September (and I ate indoors, which seemed a nicer experience than being outside on the windy boardwalk). Was happy to have visited the Pavilion, though the ticket and audio guide were expensive. I could've used more information from signage in that museum, but it was the reason I'd gone to Brighton, so it was fine. I was pleasantly surprised by the rest of Brighton. I searched for remnants of Regency architecture, and was just awed by the pebble beach, having never seen one before. And the ruins of the 19th century Victorian Pier are just incredible. I only had a day in Brighton, but it would've been nice to have an overnight there. Your plan sounds great to me.
