Artesia Day and Night trains are not Eurostar trains but they link Paris and Italy
www.voyages-sncf.com for schedules, fares and booking - look for discounted PREM fares. The site can be fickle however. In the U.S. RailEurope sells these tickets but usually at a higher rate but once in a while may have specials as well. I always advise calling Byron at BETS 800-441-2387 to check on any RailEurope product to check prices because of the great personal service and that they don't charge RE's $18 mailing fee - check but if you can make the sncf.com site to work - and many cannot - that's a resort. (If you do have problems with the French Rail site - sncf.com ask questons here and folks like Ira and TimS who know all the intracies and can help you thru it. For discounted fares hop on them as soon as they come on line as these trains, especially the overnight trains Paris-Milan, Florence, Rome and Venice can often be sold out IME.

EU-Rail - not familiar with that site but if prices are in $ it's probably ultimately thru RailEurope
You should go to www.voyages-sncf.com to see what prices are in euros to see if any dollar rate is not outrageous for the exact same ticket as it often is.
There is no day train Paris-Florence but you take a TGV Paris-Florence and then a Eurostar (yes) Eurostar Italia train from Milan to Florence. www.trenitalia.com for the Italian portion ticket but this site is even more frustrating than the sncf.com one!
There is a direct Artesia Hotel Train for overnight direct train Paris-Florence, arriving in Florence around 7 or 8 in the morning. Again www.voyages-sncf.com for euro pricing and booking
