My suggestion would be to do some reading about Europe. You could start with the "destinations" on this web site. Or with some of the trip reports that have been posted here. Or go to the library and check out some guide books. The "Go!" series might be a good place for you to start as they're written with college students in mind.
But you need to get a sense of what most interests you. With only a week to spend, you can't do it all!
And, in my opinion, the planning is at least half the fun anyway!
Good luck!

Find a USA University with a European campus. Enroll for a week long course in your major. Every city in Europe has great cuisine, nightlife, culture and there is always plenty to do. Today I suggest, Berlin. You could spend a week in a major Euro library researching a theme paper. Seek out your college staff that has been to Europe, ask them them your question.

Google images of the various places suggested and just browse for awhile. I love the architecture of some cities and can't wait to go see them in person. I'm not suggesting that this be the sole way to chose a city but just to whet your appetite a bit.
I'd stick with one city with just a week to travel.

Some great sources for young first-time Euro Travelers:
Let's Go Europe - written by U.S. students for 30 years now and invaluable in finding cheap accommodation, food and a general guidebook detailing sights, etc., all from a youthful aspect. In any large bookstore or library.
www.ricksteves.com - unique look at rail travel, passes and alternatives like cheap flights.
www.budgeteuropetravel.com where you can request the superb European Planning & Rail Guide that is a good primer on using trains, with itineraries, rail maps and train coverage in each country, etc. plus packing tips and non rail stuff.
Fodors.com - the very best travel talk site i've seen with an amazing number of experienced genuinely helpful travelers to answer questions.

Reading travel magazines is another way to get some good ideas... Budget Travel, Conde Nast (not budget but good photos and itinerary ideas), National Geo Traveler, etc.
Pretty much anywhere in Europe you can find all the things on your list. You need to narrow it down a little!!
