LOL, every night after dinner before we would stay in for the night at the little apt in the 7th, we would walk over the few blocks to the Eiffel Tower and just look up at it. The best night was when I walked over with my son and at the closest point, it is hidden by the apt bldgs, then you walk past them and look over and there it is!
I loved being the one to show my son that sight for the first time And I really liked that sight myself!

The Eiffel Tower is of course stunning at night when all lit up, but check it out early morning sometime (particularly if you are jet lagged and wide awake at 5AM as I was once). Unlike the daytime/evening, when the area is positively mobbed with tourists, early in the morning there is NO ONE there! The tower isn't lit up in the early morning but it's still magnificent in the early morning light. Very peaceful and you'll have the view mostly to yourself.
The views of Paris from the Arc de Triomphe are indeed spectacular, so much so that in 2002 I showed up at dusk one evening with my camera and tripod, paid the entrance fee, huffed all the way up all those steps, setup my tripod and camera, then was told by a security guard that I wasn't allowed to use a tripod up there without a permit!!! I still got a few decent shots hand-held, thanks to higher ISO on my dig camera and a stabalizer, but I was more than a little upset!

I finally climbed Notre Dame tower last year- the view of Paris with the chimera in it was great.
I like the high-up view from Tour Montparnasse.
I like it when the trees have the autumn colors - looks fantastic against the Parisian architecture, or in the parks with those white marble statues..
I like lining up the sights, ie. from Rodin's garden, line up 'le Penseur', Napoleon's Dome, and Tour Eiffel.
