Just wondering if anyone can confirm whether or not we can use our Australian ATM cards (with Maestro / Cirrus) to get money at banks in Spain?

Yep! Let your bank know beforehand that you will be traveling in Spain and confirm your pin with them. Enjoy!

Make sure you know your PIN in numbers as letters do not appear on the buttons, I hear.

You need a four number PIN.

Cirrus will work almost everywhere, except the ATM's of the small local banks. Maestro is a bit more patchy.
