Spain & Portugal for a month

Need some help with our itinerary for our "bucket list" trip to Spain & Portugal in May. We are flying into Madrid and renting a car to tour after 4 days in Madrid. We love museums, food and history! We are in our 60s buy relatively active. I do love flamenco so I would like to see some. Not into Wine at all and live at the beach in Mexico so hanging out at the beach won't be happening! Suggestions? We will be continuing on to England after Madrid. Any suggestions? Thanks in advance!

HI, I'm from Lisbon,
Madrid is awesome city, but there are better ones in Spain.
You have several itinerary options, but you have to include Portugal, for sure.
After Madrid you should take the route to Toledo, the old Spain Capital before Madrid, then Ciudad Real - Cordoba - Seville (for flamenco) - Mérida (old roman amphitheater) - Then Portugal - Elvas (Unesco protected big fort) -Vila Viçosa - Estremoz - Monsaraz (medieval Village) - Évora - Lisbon (should be included, much better than Madrid). Lots of flights departing from there to England.
