Yes, there are. South of Frankfurt are two medieval towns, good for town squares and old churches, Worms and Speyer. North is the best stretch of the Rhine, from Bingen to Boppard, with old towns, castles and churches on both sides of the river. Some useful trains are these.
Frankfurt 0819, buffet car train for breakfast, Heidelberg 0914 to 0944, Speyer 1004.
Frankfurt about 0747, Mainz 0826 to 0852, Worms 0936
Frankfurt 0908, Bingen 1010, Boppard 1037.
And a boat service Rudesheim 1000, Bingen 1010, St Goar 1130.

Would there be one day river cruises on the Rhine originating in Frankfurt Ben?

Würzburg is a lovely small city just one hour by train from Frankfurt.

Its castle alone is worth the trip, and then there's the Residenz; but it's a town with a nice feel to it to just walk around in. And for quaint, a little side trip from there up to Lohr, also on the river Main, is also worth the effort. It too has a castle.

Here is a connection for you:

ex Würzburg 15.33 - Lohr 16.05

ex Lohr 18.10 - Frankfurt Central 19.24

Or you can take trains leaving exactly one hour earlier in each case.

Enjoy

You might also consider Kronberg or Bad Homburg. Both are short train rides from Frankfurt and are nestled in the wooded hills.
