Road trip from Perpignan to Tuscany
I am planning a road trip with my husband and 4 children from age 14 down to 7, driving from Perpignan to Norcenni Girosale campsite in Tuscany I plan to stay around 8-9 days in campsite in Tuscany and 5-6 days exploring either end of this. I am not sure wheither to drive to Monaco area and stopover there for a few days and then head onto Tuscany. Or head to italy and visit Pisa, Genoa etc.. bearing in mind I will have bikes and alot of luggage in the car which might be a hinderence with too many stop offs. If anyone can recommend any ideas. We will have been in Perpignan for 3 weeks before we start this trip. We are not looking for funparks or aqualand stopovers, or anything too touristy but love fun cultural sights and nice nature experiences.

You might want to drive through Monaco and stop for a few hours, but I wouldn't plan overnights there - really boring for kids, IME. But there are plenty of other places to spend a few nights along the Côte d'Azure.
Will this be a rental car? If so, you should know that if you pick it up in France and drop it off in Italy, you'll pay a whopping amount extra for that.

You might check out visiting some of the caves and Roman sights that are near Ventimiglia. I am assuming this is a summer trip, and Monaco would just be such an ridiculously expensive zoo, and there is nothing for kids to do there.
It's about 5 hours to the Italian border from Perpignan. Can you do that in a day with a long lunch stop? Then I would spend 2 nights in a b&b with a pool around the Ventimiglia area -- not in the town, in the countryside, and do some low key exploring. Visit a town like Apricale. Or maybe even Eze (mobbed in season).
After that, i suggest an agriturismo around Lerici/Sarzana as your next stop. Just about 3 hours away from Ventimiglia. (Skip Genova.) Lots of lively beach fun plus the opportunity to do something like visit the Cararra marble quarries, or Lucca for bike rides or Pisa (but you can do that en route to your Tuscan campsite) or take a few boat rides around le Cinque Terre (mobbed in tourist season) .
if you want nature and non-tourist experiences, keep thinking about what isn't "coastal" but just a stones throw inland. Around Lerici, nature parks like Montemarcello, or inland towns with castles like Sarzana are off the tourist radar. Check out staying in agriturismi in these areas because, with your bikes and such, it might work out much better than trying to deal with that in the coastal towns.
Around Ventimiglia, look in the hills near Dolceacqua or in the upper reaches of Bordighera. Around Lerici, look at Serra and Ameglia as well as Montemarcello and Sarzana and such.
