Otranto, from memory, has a pretty expansive promenade waterfront. I was there in October and all of the beach-front restaurants had shuttered. So unfortunately cannot comment on the beach scene there. The town is worth visiting as well.
Other options for beach time, assuming your itinerary hasn't changed are Monopoli and Polignano a Mare.
