Thank you Kimhe! You are one of the people who convinced me to go to San Sebastian, I've written down loads of restauarant recommendations thanks to you! And we will definitly see at least one flamenco performance.

... and I can't hold myself for a couple of more San Sebastian tips:
As a contrast to the Parte vieja/Old town and the seaside part, I recommend the area in and around the Reyes Catolicos street, just behind the Buen Pastor cathedral. Great and grown up nightlife, several laid-back music bars long into the small hours. Here you also find Casa Valles, an institution in town and the birth-place of the "Gilda", the quintessential San Sebastian pintxo: http://www.barvalles.com/

These are 'hotel trains' and in Gran Classe (sp?) some even have showers in the compartment (but these cost a lot) - anyway there is a variety of accommodation from multi-person with strangers of both sexes couchettes for about $25 p.p. above the train fare (paid for by a pass if you have one - if buying ticket everything is included in the price - www.renfe.com - Spanish Railways site. Earl;y bird gets the proverbial worm. But discounted tickets again non-refundable non-changeable I think (not totally sure).

Okay I looked at the specific train/flight websites and found the travel times and costs. I decided to move Barcelona to the end of the trip. (Yes, I do realize that I will need to arrive at the airport a few hours early.)
Train Amsterdam to Paris: 3 hr 20 min 35E each
Fly Vueling Paris to Bilbao: 1.5 hrs 60E (including 1 bag) each
Bus Bilbao to San Sebastian: 13E each 1 hr
Bus San Sebastian to Bilbao: 13E each 1 hr
Fly Vueling Bilbao to Seville: 55E (including 1 bag) each
Bus Seville to Granada: 10E 3 hr 5 min (bus is cheaper and faster)
Fly Vueling Granada to Barcelona: 1 hr 20 min 58E (including 1 bag) each
Fly home from Barcelona

I still need help deciding where to put the extra night though!
Right now the itinerary is as follows.
Amsterdam: 3 nights, 2 full days jetlagged
Paris: 7 nights, 6 full days or 5 full days with Versailles day trip
San Sebastian: 3 nights, 2 full days
Barcelona: 6 nights, 4 full days
Granada: 2 nights, 1 full day
Seville: 4 nights, 3 full days
Should I take the seventh night from Paris and add to Barcelona or somewhere else? I was thinking about possible day trips I could do from these places. Recommendations? I'm already doing Versailles and Cordoba as day trips.
Paris daytrips: Provins, Rouen
Barcelona: Sitges, Costa Brava, Roses, Girona, Cadaques (may be too far)
San Sebastianaint Jean de Luz, Hondarribia, San Juan, Lekeitio

I'd add it to Amsterdam, a city with a surprising variety of varied sights apart from its famous museums - perhaps even do a day trip to a regional Dutch town - like Delft, Gouda or Haarlem or a day trip to Zannse Schans (easily twinned with nearby Haarlem)to see Holland's 2nd greatest collection of behemoth wooden windmills:

Easy to do on your own - train to Koog Zaandijk and a short walk from the station - about an hour all told from Amsterdam each way - and Haarlem is a gem too, Amsterdam is full of foreign tourists and cosmopolitan - Haarlem is a real Dutch regional market town:
