Portugal & Spain in November

Portugal & Spain in November
We are planning a 25-day trip starting and ending in Lisbon from November into the first week of December. We've been to Northern Spain, but never to Portugal or Southern Spain, and I'm getting overwhelmed trying to plan the itinerary. I'm so excited and want to see it all, but don't want to be crazy with hopping from place to place in a frantic rush. Would be grateful for any itinerary help. Here's what we've got so far:
Lisbon: 4 nights, then pick up car
Sintra: 1 night
Obidos: 2 nights (side trips to Tomar, Batalha)
Porto: 3 nights
Evora: 2 nights
Aracena (because we're driving): 1 night
Seville: 5 nights
Granada: 3 nights
Cordoba: 2 nights
Merida (on the way, driving): 1 night
Coimbra: 1 night and then drive to Lisbon airport in the morning
There's one extra unassigned night, which I could add to any of the above places. Are we making a mistake excluding the Lagos area?(I live near beautiful beaches in Hawaii so don't care about swimming in cold November, but the photos look so stunning! And the tourist scene should be thinned out, which sounds good.). We have a freebie in Obidos for those two nights, so I'd like to keep that. Otherwise, everything is changeable.

Visit Sintra from Lisbon, easy train trip, impossible to park.
I would get rid of the car once you reach Sevilla, it is a PITA to have one there. And you can steal one day from Granada is needed.
Then pick up a car again on the way back to Lisboa.

Thank you IMDonehere! What would you do with the day you'd steal from Granada? Add it to Sevilla? Or something else? As for ditching the car before Sevilla, the problem is that we'd pay a huge drop-off fee to do that, so we're going to have to find accommodations with parking or else an inexpensive place to park outside the city. Any ideas?

You are right about the huge drop off fee. I do not think there are any convenient flights from Lisboa to Sevilla or Granada.
But if you get a hotel with small parking fee, then maybe it will work out.
In the south there is Malaga and Ronda that you want to take a peek at.
