YOu may want to start by giving your granddaugher a good guide book that has photos and descriptions of places like the DK Top 10 Paris book. She can also visit some websites like Time Out Paris or websites of specific musuems and sites to learn more about Paris...since most kids relate to information on the computer more than through books.
If she has specific interests you can plan around those interests. I also found that it was good to try to find places that related to what she is studying in school. For example, my daughter is now studying the French Revolution and is very interested in visiting the Le Conciergerie to see where Marie Antionette was jailed, as well, as Versailles. We are going to Paris in April (husband and daughter who is 15.) We were in Paris two years ago and these are the things she enjoyed...The Orsay Museum, walking along the Seine and looking at all of the touristy trinkets for sale (and buying some), the Eifel tower was a highlight, she loved the Sacre Couer, the Luxembourg Gardens, enjoyed walking along the Seine, sitting in an outdoor cafe for dessert and people watching on the Champs Elysee, shopping at a really funky and reasonably priced store called Pimpke (lots of fun trendy teen clothes), she also liked the Picasso Museum, we went to the Louvre and saw Mona Lisa (but we went too late in the day and were too exhausted by the time we arrived)- the Louvre is immense so this time we'll go early. We loved walking around Paris and just taking in the scenes. We only had 4 days in Paris (following a trip to Prague)-so this time we hope to see more of the city. Good luck.

Bonjour
In the evening pick up an icecream at Amorinos in picturesque Ille St Louis - http://www.amorino.fr/stlouis.htm. Then stroll to the square in front of the Notre Dame where they have entertaining street performers. Lively atmosphere.
This is not for the evening but pretty cool - http://triggur.org/cata/index.html.
Au revoir
