Well the latter doesn't seem to have a train station. I would check with whoever you will be visiting - or the web site of whatever you are going to see - to find the nearest train station, then just look up on bahn.de - it will give you a complete schedule of trains.

You can get a train from Paris to Vernon.
I suggest contacting the office of tourism at Vernon beforehand to see if you can arrange a taxi to take you there and wait while you visit La Roche-Guyon for an hour or two. La Roche-Guyon is tiny.
If you could rent a car, there are some really nice drives in that area.

There is bus serv ice between Mantes-la-Jolie (take a train from Paris Saint-Lazare) and la Roche Guyon. It is line 11. I haven't looked at the schedules to see how frequent it runs but here is the schedule if you want to have a look:

Here's some other info about visiting La Roche Guyon from the town's website (the English version seems lacking):
http://www.larocheguyon.fr/heading/heading538.html
On the above website is info about the Baladobus that runs on Sunday from Mantes-la-Jolie and can be used to tour the region (known as the Vexin region) on Sundays in the summer.
And the tourist office websites:
