Well, for starters, considering that they put it in the name of the place, I would think you might want to start with

le Bar(s) à Huîtres (several locations)
http://www.lebarahuitres.com/us/index.html

and, this might be worth your while, if you're made of money...

Guy Savoy
$$$$ W
Modern and seasonal cooking bearing the unforgettable mark of a great chef can be found at this Paris Mecca. This is one of Paris restaurants' shining stars. Guy Savoy has defined his signature style and it includes such absolute winners as huitres en nege glacée (oysters on cream with jellied oyster liquor topping) and grilled sea bass. The desserts are heavenly, as well.
18 rue Tryon
17th Arr
Metro: Charles de Gaulle-Etoile
Open: Mon-Fri noon-2:30pm and 7:30-10:30pm,
Sat 7:30-10:30pm
Closed: Sat lunch and Sun
Credit AMEX, DC, V
Email: [email protected]

http://ww...aris_res17.cfm

Best wishes,

Rex
I've had some good ones at Le Dalou, 30 Place de la Nation. Very nice and very reasonable -- away from the tourists, but an interesting neighborhood. For a pic, etc.:

http://www.igougo.com/planning/journalEntryDining.asp?JournalID=3126&EntryID=2160

Bon appetit!
