I suggest that since you are going in January that you stick to your plan of staying in Ennis and not switch to Doolin or Ballyvaughn. I love Ballyvaughn but I suspect it will be a ghost town in January. Same for Doolin although there would probably still be something going on in the Doolin pubs then. Speaking of which in my opinion Ennis is far superior to Doolin in terms of pub nightlife and Traditional Irish Music. Hands down. As I once heard a musician say "You can spit in Ennis without hitting a music session." So there you have it.
Also your thought about changing your itinerary to 2-2-2 for Kenmare, Dingle, and Ennis sounds like a decent plan and I'm sure it would work out fine. As to comments here about Kenmare being touristy well Dingle is touristy too (not in a bad way) so there you go.
